Queen Brittany. A refreshing springtime sip featuring an earl grey simple syrup, blended snow ice, and a sweet and tangy mix of blackberries and lemon, with a fragrant mint bouquet (tuck it by the straw so your nose finds it each time you take a sip!).
Use high quality, organic corn (the juiciest stuff always comes from your local farmer’s market!) and have fun jazzing it up with some of my garnish ideas below. The soup can be served hot or cold, and with pieces of a rotisserie chicken on top, makes a perfect little dinner.
This soup is an excellent party dish because it’s show-stoppingly beautiful, it comes together in a flash, and it can be made ahead. Serve it hot or cold.
