FOOD LA LA RECIPE: EASTER BUNNY GRAPEFRUIT GRANITA

INGREDIENTS:

  • 2 ½ cups grapefruit juice

  • 1 cup sugar

  • 1 bottle dry champagne or Prosecco

  • ¼ tsp salt

  • Optional: ½ cup white chocolate, pink food coloring

STEPS:

  1. In a small pan, combine, sugar, grapefruit juice, and salt. Bring to a boil then reduce to a simmer. Whisk until sugar is dissolved. Remove from heat and let cool completely.

  2. Pour juice and sugar mixture into a baking pan (that can fit in your freezer!) and add the champagne. Stir to combine.

  3. Freeze for 1 hour, then scrape with a fork. Continue to freeze, then scrape every 30 minutes (for about 3 hours, until it’s fluffy!)

  4. Meanwhile, line a baking sheet with parchment paper. Melt white chocolate and divide in half. Put a few drops of pink food coloring in one And leave the other white. Transfer each to a piping bag or plastic bag. Pipe bunny ear shapes, then tap on the counter to smooth. As soon as it dries (5-10 minutes), repeat process with the pink chocolate to make the inner ear. Tap pan down and let sit to dry.

  5. Scoop granita into a small glass bowl or champagne coup, and top with two white chocolate bunny ears! Serve immediately!
