Millionaire's Bacon

Bacon really is the most versatile ingredient, don’tcha think!?  First reserved to accompany eggs or french toast, then club sandwiches, and eventually . . . to top ice cream, dip in chocolate, or slide in Bloody Marys.

 

And though ain’t nothin’ wrong with good ole’ regular bacon, I love this terribly addicting combination of sweet and salty, candied, spiced Millionaire’s Bacon (if you’re in San Francisco - I first found it at Sweet Maple, then Blackwood).

 

Make it for breakfast, make it for lunch, make it for a snack, make it for dinner   . . . or make it for dessert.


FOOD LA LA RECIPE: MILLIONAIRE’S BACON

INGREDIENTS:

  • 1/2 pound good quality bacon

  • 1 tsp cayenne pepper

  • ½ TBS crushed red pepper

  • ½ TBS ground black pepper

  • ½ cup light brown sugar

  • ¼ tsp ground ginger

STEPS:

  1. Preheat oven to 350.

  2. In a bowl, combine all ingredients (except bacon) and mix thoroughly.

  3. Toss strips of bacon in sugar mixture, ensuring both sides have coating.

  4. Place a wire rack on a baking sheet and spread the bacon out evenly.

  5. Top each piece of bacon with a remaining sugar mixture, and pat down to ensure bacon is coated.

  6. Bake until golden brown and bacon is crispy (about 30 minutes).

  7. Remove from oven, let rest until it comes to room temp, then serve!
